You’re only 5 simple and clean ingredients away from satisfying your sweet tooth with these ultra rich brownies. These are sure to do the job! They’re so chocolaty from the combo of cocoa powder and chocolate chips. Roast the sweet potato in the oven, remove the skin, then mash it with cocoa powder, maple syrup, almond butter and chocolate chips.

Cooking Tips

To prepare the sweet potato, poke holes all over it with a fork then wrap it in aluminum foil. Once it’s roasted in the oven, it will be soft enough to mash with a fork. Leave the skin on the sweet potato while it’s roasting in the oven, and remove the skin before mashing. Discard the skin, as it will not break down into the brownie batter.

  • 1 8×8 pan

Ingredients
 

  • 1 large sweet potato approximately 1.5 cups mashed
  • 1 1/2 cups almond butter
  • 2/3 cup cocoa powder
  • 1 1/4 cup maple syrup
  • 1 1/2 cups chocolate chips

Instructions
 

  • Preheat the oven to 375 degrees.
  • Wash the sweet potato and poke multiple holes in it with a fork. Wrap it in aluminum foil, and bake in the oven for 1 hour. Cool completely, then remove the skin and mash with a fork.
  • In a medium mixing bowl, add the mashed sweet potato, almond butter, cocoa powder, maple syrup, and 1 cup of chocolate chips. Mix until well combined.
  • Layer in an 8×8 pan lined with parchment paper, and bake at 375 degrees for 45 minutes.
  • Top with the remaining ½ cup of chocolate chips, and bake for another 10-15 minutes.
  • Let cool, cut, and enjoy!
