These black bean burgers are an absolute go to! They’re a crowd pleaser sure to have your family coming back for more. The texture is crispy on the outside and slightly soft on the inside for the perfect burger bite. They have a slight smoky flavor, and you can customize with your choice of toppings like grilled onions, lettuce, tomato, and pickles.
Drain and rinse the black beans, then lay flat on a parchment lined baking sheet. Bake at 350 for 10 minutes, then mash with a fork.
Heat 1 Tbsp of olive oil in a small skillet over medium heat. Add onion, bell pepper, and minced garlic and cook until softened and most of the water is absorbed.
In a large bowl, mix the mashed black beans, cooked vegetables, and the remaining ingredients including the flax egg. Stir together until well incorporated.
Form into 8 burgers using a ⅓ cup of the mixture for each burger. Lay burgers on a baking sheet lined with parchment paper.
Bake at 375 for 20 minutes, flipping halfway through.
